Eid day baking continued .
Red velvet biscuits: recipe (Instagram: @happywivescooking)
Makes 20-30
160g butter
250ml castor sugar
1 egg
5ml vanilla essence
430 ml flour
60ml cocoa powder
15 ml red food colouring
3ml vinegar
Whip butter and castor sugar until light and fluffy .
Add egg and vanilla and beat well.
Sift flour and cocoa and add to whipped mixture.
Add colouring and vinegar.
Turn the dough onto a lightly floured surface and knead until smooth wrap in cling wrap for 30 mins.
Roll out dough lightly to 5mm thick on a lightly floured surface and cut into shapes.
Place on baking tray in the oven at 180 degrees for 10-15 minutes until firm to the touch.
Filling:
125 grams butter
250 grams thick cream cheese
5ml vanilla extract
750 ml icing sugar
Whip butter until it is fluffy, add in cream cheese and beat well. Add vanilla and icing sugar
Sandwich the cookies with icing between.
Tea table is now sorted since the red velvet craze lives on.
