Eid day baking

Eid Mubarak to all those celebrating , I hope you had the most amazing time with your loved ones . As much as we undoubtedly deny it, Eid ends up having a lot to do with food ( especially baking) and this year I decided on Peppermint aero cakes , burfee biscuits and red velvet biscuits .

Peppermint aero cake: (recipe: Taskeen Hassim )

Ingredients:

1 cup milk

100 grams butter

1 cup castor sugar

3 large eggs

1,5 cups flour

3 tsp baking powder

2 tsp peppermint essence

Green food colouring.

Method:

Melt butter and milk together on stove till hot (do not let it boil)

Beat eggs and sugar together until fluffy and white.

Add milk mixture into dry ingredients as well as peppermint essence and food colouring. Beat once till combined be careful not to overbeat. The mixture was absolutely fluffy and light .

Bake at 180 degrees for approximately 25mins

Ganache: melt 180 grams of peppermint aero with 1 tsp oil in the microwave.

Mix in 1 tin of nestles cream and pour over cakes and decorate with peppermint aero or as desired.

Centre (optional): whip cream with a bit of cocoa and some icing sugar.
