Whey Protein Crumpets

This post is especially for those of you who love the gym and protein has become a daily essential . Whey protein crumpets , a simple recipe for crumpets , just with the added necessary goodness that active people appreciate the most . I know I most certainly do .
Crumpets:
1¾ cups self-raising flour
¾ teaspoon salt
2 tablespoons sugar
1 egg
½ teaspoon baking powder (I added 1 teaspoon because of the additional whey protein)
½ pound butter or 3 tablespoons melted butter
1 cup milk
2 scoops of whey protein ( I used the chocolate flavour of the Gold Standard 100% whey)
Method:
Beat egg
Fold sugar and salt into the egg
Add melted butter
Mix well and add flour, baking powder and milk and whey protein.
When I make the original crumpet recipe I usually put a little bit off ghee onto the non-stick pan before I put the mixture on, however keeping up with the healthy trend I used olive oil instead.
Be it pre or post gym this is an excellent tried and tested, flop proof recipe that needs no add on syrups , but if you’re like me and simple crumpets just doesn’t do it for you add fresh fruit instead of syrup ( or icing like I did since I was baking mum a birthday cake ) it was divine regardless !
