A new craze.

Hey lovelies, so I noticed the newest craze at weddings and most functions these days is almond Rocha, I can’t possibly be the only one who has noticed the golden platter of Rocha at each table as well as the entrance that literally stares at you through the entire function till the granny next to you decides to pass it to the kiddies at the other table, Sigh!
So I decided that a new essential for my functioning is my very own almond rocha stash , I wanted to be lazy and go out and just buy it so I tasted a few different ones . The first I discovered in Desai Meats, not too sure who actually makes them but they were really good but I’m not a crazy fan of desiccated coconut and this container was like a snow globe of coconut. Mum came home one of the days with some from Gorimas spice shop in Pavillion , it either tasted similar to the Desais container or it was just my tastebuds general dissatisfaction with desiccated coconut (probably) that didn’t do it for me .
My Aunt gave me a recipe that she came across while she prepared for Eid. It was quite tricky so when she offered her kitchen and her guidance I was more than thrilled. No coconut necessary for this thankfully but Ladies and Gentleman we have a winner!!!

Almond Rocha :
¾ lb Butter or Rama
1 ½ cups sugar
3 tbls water
2 tblsp liquid glucose
½ cup chopped almonds
Method:
Mix water and liquid glucose in a small bowl.
Melt butter,add sugar and stir until dissolved in a 20 cm pot on medium heat.
Add water and liquid glucose mixture and mix until slightly brown.
Add almonds and continue stirring till mixture almost looks and feels like bubble-gum.
The colour by now should be between a beige and brown after 20 mins of stirring ( we took turns coz this was really difficult)
Line a tray with foil and pour mixture onto the foil.
Smooth with spatula about 5mm thickness or whatever you prefer.
When cool, spread a thin layer of melted chocolate over the top and allow to set.
Apart from dead arms I really enjoyed this recipe and the process that came with it. Company in the kitchen always makes the end result more worthwhile , not to mention the memories that will now be associated with every craving of almond rocha .
